Hi all, just a short post for today.

I started this blog on January 9 this year and to date have written 49 posts (this 1 makes 50). I am quite proud of this achievement.

At first I wasn’t sure if I would be able to find something to write about every week. However, there is so much to learn about health and diet.

Along the way I have learned a lot about how this site works, key words and how to improve my writing style. Every post that I spend time researching has broadened my knowledge.

I hope that along the way I am also helping you to learn more about the different things that affect your health.

I am going to take a break from posting over the Christmas period.

Scott and I wish you all the best over the holidays, may you spend it with people that make you smile.

Salt – is it bad for you?

Today’s post is about the myth that ‘Salt is bad for you’.

There is a lot of information available in regards to salt and health. I found many health articles reporting on how bad salt is for our health. Conversely, there are also an equal number of articles reporting that it is good for our health.

So what is right?

There are 2 million medical articles published every year regarding our health and sorting out this information was a challenge.

The fact is that the human body needs some salt for good health. Consuming too much may increase the risk of developing high blood pressure, which is a risk factor for other diseases. Too little and the body also suffers.

The trick is to consume a moderate amount. Statistically, many people are consuming too much ‘hidden’ salt. The rise in processed, packaged and canned foods are the issue as they usually contain added salt.

Water and Real Salt are essential for life

 The first thing doctors will do in hospital is put you on a life saving saline drip. We were born out of a water salt sack into a world that is 73% water salt solution and have a body that is 73% water and a brain that is 85% water.

The human body contains many salts, of which sodium chloride is the major one. This makes up around 0.4 per cent of the body’s weight at a concentration pretty well equivalent to that in seawater. So a 50kg person would contain around 200g of sodium chloride (approx. 40 teaspoons).

Sodium is a vital nutrient. It helps to maintain fluid balance and cardiovascular function. Sodium is absorbed from the gastrointestinal tract, always bringing water along with it. It is the major mineral in plasma, the fluid component of blood, and in the fluids that bathe the body’s cells. Without enough sodium, all these fluids would lose their water, causing dehydration, low blood pressure, and death.

Fortunately, it only takes a tiny amount of sodium to prevent this scenario. The body, in its wisdom, can make do with remarkably small amounts of sodium. In fact, some isolated population groups in the world manage perfectly well on just 200 mg a day. And when dietary salt is in short supply, the body can conserve nearly all its sodium, dramatically reducing the amount excreted in urine and shed in sweat. Remember that water always follows sodium, and you’ll understand why your skin is dry and your urine scant and concentrated when you are dehydrated and conserving sodium.

To be sure its supply of salt and water is just right, the body has developed an elaborate series of controls. The blood vessels and brain signal the kidneys to retain or excrete sodium as needed; they also fine-tune the sensation of thirst so you’ll provide water in amounts that match the body’s sodium supply.

How much should we consume?

The National Health and Medical Research Council set an ‘Adequate Intake’ of 460–920 mg of sodium per day. This corresponds to 1.15 – 2.3 grams of salt. Most Australian adults have a daily salt intake of about 10 grams. A ‘Suggested Dietary Target’ of 1600 mg of sodium (equivalent to about 4 grams of salt) has been set for Australian adults.                                             (Sources – www.chriskresser.com www.nutritionaustralia.org www.health.harvard.edu )

 

The best way to ensure a moderate salt intake is to consume less processed and packaged foods. Only add salt when cooking or at the table. Choose a less processed salt, therefore also gaining some trace minerals.

Spinach and Iron – myth or fact ??

Today i’m going to tackle the myth that Spinach provides us with lots of Iron.

The idea that spinach contained exceptional levels of iron originated in 1870 with a German chemist named Erich von Wolf. Dr Von Wolf was researching the nutritional benefits of this leafy vegetable. In his notes, he accidentally printed the decimal point in the vegetable’s iron content in the wrong spot. 3.5 grams of iron suddenly became 35 grams, an extremely high amount of iron.

Those figures remained unchallenged until 1937, when it was discovered that the content was 1/10th the claim. The oversight resulted from a misplaced decimal point.

The cartoon character Popeye also popularised the idea of high iron content in spinach. In fact, spinach growers credited Popeye with a 33% increase in U.S. spinach consumption and saving the industry in the 1930s, according to Popeye’s official website.

 The nutrition facts 

Spinach doesn’t have that much more iron than other leafy greens like broccoli and kale. One cup of raw leaves has .81 milligrams of iron, while the same amount of broccoli has .66 mg. and kale has .24 mg.

Although it contains higher levels of iron and calcium, the rate of absorption is almost nil. This is due to it containing high levels of oxalic acid, a food component that inhibits iron and calcium absorption.

Despite its unusable iron and calcium content, Spinach is still a highly nutritious vegetable. It’s rich in several important minerals, proteins, and vitamins. It’s juice is also said to be the most potent for the prevention of cancer cell formation. Research has shown that those who eat spinach daily are less likely to develop lung cancer. It is also a good source of the B vitamin, Folate, that promotes normal foetal development during pregnancy.       (Source – www.innvista.com)

Spinach is often paired with dairy products, especially cheeses in many recipes. In the Middle East and Greece it is often teamed with feta or haloumi, while Italians combine it with ricotta or parmesan. However, pairing this dark green vegetable with dairy can lessen the amount of calcium your body absorbs from the dairy products.

 The different varieties

 

English spinach, or true spinach, is often confused with silverbeet. Spinach, however, has a smaller, flatter leaf and green veins, as opposed to the white veins of silverbeet.

Baby spinach is a flat-leaf green with soft, tender and mild-flavoured leaves. Usually sold pre-washed, it requires no advance preparation. Because the stems are so tender, there is no need to remove them. It’s perfect raw in salads, and can be added at the last minute to many dishes, or used in any recipe requiring English spinach.

Silverbeet is a close relative of spinach and beetroot, and is believed to have originated in the Mediterranean. Silverbeet is also best with the stalks removed and cooked. Cook as briefly as possible to retain maximum nutrient content.

 

So whichever type of spinach you prefer, continue to enjoy it. Just don’t rely on it as a source of iron or calcium.
